Barbara's Rosemary Sweet Potatoes

I got this recipe from my mother in-law. I do not know where she got it from. This is a great side dish to lots of different meats. The left-overs are good cold.

Ingredients

  • Sweet Potatoes one small per person

  • 1 onion per two people

  • One or two cloves of garlic per person (cloves not fists, unless you love garlic)

  • Olive Oil, 1 tablespoon of olive oil per 2 persons

  • Dried Rosemary, 1 teaspoons per person

Instructions

  1. Peel and cut sweet potatoes into 1 to 2 inch cubes.

  2. Chop onion into large pieces

  3. Chop Garlic

  4. Mix ingredients together very well in an oven proof dish with a lid.

  5. Cook covered at about 325 for 30 to 60 minutes.

Notes

  • This is only the second time I have made it; I am still trying to get the timing down.

  • The amounts are my guess of what I did.

  • (1) Points, you have to make the dish and calculate the points by how many ways you divide it.

    • Sweet Potatoes are 1 small, 2 points

    • Olive Oil is 1 tsp, 1 point

    • Onions, cooked 1 cup, 1 point
