Barbara's Rosemary Sweet Potatoes
I got this recipe from my mother in-law. I do not
know where she got it from. This is a great side dish to lots of different
meats. The left-overs are good cold. |
Ingredients

Sweet Potatoes one small per person

1 onion per two people
-
One or two cloves of garlic per person (cloves not
fists, unless you love garlic)

Olive Oil, 1 tablespoon of olive oil per 2 persons

Dried Rosemary, 1 teaspoons per person

Instructions

Peel and cut sweet potatoes into 1 to 2 inch cubes.

Chop onion into large pieces

Chop Garlic
-
Mix ingredients together very well in an oven proof dish
with a lid.

Cook covered at about 325 for 30 to 60 minutes.

This is only the second time I have made it; I am still
trying to get the timing down.

The amounts are my guess of what I did.

and calculate the points by how many ways you divide it.
